The reason is that most of the edamame produced and shipped is consumed within Niigata Prefecture!
Surprisingly, despite consuming a large amount of edamame every year, they are not satisfied with it, and they hold a world competition called "World Edamame Eating Championship" to determine the top of "I am a true edamame lover!" And the majority of players from all over the country are gathering in Nagaoka in July!
We will hold the "Echigo Nagaoka Furusato Tax Return Gift Trade Fair ~ Edamame Eating in Autumn ~" so that everyone can know and eat the precious edamame.

Compete to see how many edamame can be eaten in 100 seconds!
If you exceed the record (110g) of the World Edamame Eating Championship held in Nagaoka City, you will receive a luxurious product! !

There are more than nine varieties of edamame produced in Nagaoka.
The early ones are sown in late March, and the late ones are sown in June.
The taste and aroma of each variety is different, so you can enjoy edamame that you can only taste at that particular time.

◎The reason why Nagaoka green soybeans are so delicious

  • Change varieties every 10 days according to the season
    There are more than 400 varieties of edamame in Japan, and each variety is said to be in season for about 10 days.
    In Nagaoka, from mid-June to mid-July, sweet green soybeans (early) such as 'Otsunahime' are available, and from late July to late August, 'Niigata chamame' are known for their distinctive flavor. From early September to early October, more than 10 varieties of green soybeans (late maturing) with both sweetness and flavor, such as ``Koshi Issun'' and ``Sakamame'', are cultivated continuously like a relay. You can always enjoy delicious edamame!
  • Choose young beans that are packed with umami
    Many people think that edamame beans are full of filling and are the best! It is said to have a strong sweetness.
    Sugar content, such as sucrose and maltose, is an important factor in determining the sweetness of edamame. According to research, the sugar content peaks when the thickness of the pod (bean content) is about 90% of the maximum value. I know it will be

  • Keep freshly caught deliciousness chilled
    Does anyone have edamame stored at room temperature?
    If so, it's best to stop now.
    This is because edamame is one of the vegetables whose taste deteriorates quickly due to temperature! One study found that sucrose, the main sweet component, and glutamic acid, the umami component, decreased by about half 24 hours after harvesting when edamame was left at room temperature (20-30°C).
    That's about it. At Nagaoka's production site, the fruits are cooled immediately after harvesting, so they can be kept delicious until they reach your hands! After purchasing edamame, please put it in the refrigerator immediately, or boil it immediately before storing it.
